Flavours of ripe peaches, melons and yeasty notes mingle well with the sparkling texture of this just off-dry, medium-body. The fruit flavours are balanced well with the acidity and a creaminess that leads to a pleasant lingering finish. |

This wine has been recently disgorged and will benefit from up to 5 years bottle age. |

Vineyard / Vigneto: |
The fruit was sourced from the winery's own Pinot Noir (50%) and Chardonnay (50%) vineyards situated in the cooler sites of the Castel Boglione commune. This ensures an appropriate TA/pH balance essential for the production of quality Methode Champenois. |

Wine making / Vinificazione: |
The fruit was hand-harvested and the individual picking containers transported to the winery for chilling to 5° C. The whole clusters were then hand-loaded into the pneumatic press where they were gently pressed and the pressings eliminated. No SO2 was added at any stage before disgorging much later. After settling for 48 hours the juice was racked and tank fermented at 12° C. The wine then went through malolactic fermentation in tank, before being prepared for second fermentation in bottle. When this had completed, the wine rested in a cool underground cellar for 3 ½ years on its yeast lees to give it richness and complexity. It was then hand riddled and disgorged. |
